Tonight's dinner is one I made up years ago, and its one of the easiest ones to do last minute.
You'll need:
- 1 box of stuffing (I prefer either chicken or cornbread)
- 1 or 2 small cans of mushrooms (If you don't like them... leave them out)
- 2 to 4 boneless chicken breast or thick cut boneless pork chops
- shredded cheese (everything is better with cheese)
What to do:
- Slice a pocket in each of your breast / chops. (doing it when they are still slighly frozen is actually easier for me)
- Mix your stuffing according to directions, add mushrooms, and a handful of cheese. Mix thoroughly.
- Put stuffing mix into the pockets of in the meat.
- place in a baking dish. If you still have stuffing left, put it around the meat in the pan. Sprinkle with more shredded cheese
- Bake at 350F until meat is done, usually about an hour & 1/2, depending on how thick the meat is or how frozen it was in the beginning.
Serve.
